This Creamy Lemon Basil Pasta is Your Go-To Summer Dinner

It is hot outside. Like, aggressively hot. The kind of hot where you walk to your car and immediately question every life decision that led you to this moment. And when it’s that hot, the last thing I want to do is stand over a stove for an hour sweating into a pan of something that requires my full attention and a Dutch oven.

What I want is dinner that’s quick, simple, and light. Something that feels like I tried without actually destroying me in the process. This creamy lemon basil pasta is exactly that.

What Is Creamy Lemon Basil Pasta

Creamy. Lemon. Basil. Pasta. No surprises here. It’s exactly what it sounds like, which I appreciate in a recipe. Short pasta tossed in a sauce made from ricotta, Pecorino Romano, lemon zest, lemon juice, and fresh basil. No heavy cream. No butter sauce. No standing at the stove stirring constantly while your kitchen turns into a sauna.

The sauce comes together in a bowl, not a pan, which means you’re not adding any extra heat to your already-suffering kitchen. The pasta does most of the work. You just have to show up.

A Little Background

Pasta with ricotta has roots all over southern Italy, where ricotta has been a pantry staple for centuries. It’s one of those ingredients that’s been quietly doing the work long before it ever became trendy. Traditionally it showed up in stuffed pastas, baked dishes, and simple weeknight preparations where you needed something creamy without a lot of fuss.

The lemon version is a more modern take, and I looked it up because I always do. The combination of ricotta, lemon, and pasta has become popular precisely because it delivers something that feels indulgent without being heavy. It’s the kind of dish that punches above its weight, which is honestly a quality I admire in people and food alike.

The Technique (It’s Clever, I Promise)

Here’s the part I actually love about this recipe. You make the sauce in a heatproof bowl, and when the pasta is about two minutes from done, you set that bowl directly over the pot of boiling water.

That’s it. The steam from the pasta water gently warms the ricotta mixture and loosens it up into an actual sauce. No separate pan. No extra dishes. No risk of scrambling your cheese by blasting it with direct heat. It’s one of those techniques that feels a little like a trick, and I enjoy that.

A Few Things Worth Knowing

Use Pecorino Romano. It’s saltier and sharper than Parmesan, and it cuts through the richness of the ricotta in a way that makes the whole dish taste more alive. It’s not a subtle swap.

Salt your pasta water. This is always the answer. The sauce itself is fairly simple, so the pasta needs to come in with some flavor already built in.

Don’t skip the lemon zest. The juice gives you brightness, but the zest gives you that deeper, more fragrant lemon flavor that actually makes this dish taste like something. Use both.

Drain the pasta well. Extra water will thin the sauce out more than you want. Give it a good drain, then move fast — this pasta is best served immediately.

What to Serve It With

This is a full dinner situation on its own, but if you want to round it out, a small charcuterie board alongside it is genuinely the move. Some cured meats, a few crackers, maybe some olives. Low effort. High return. That’s the whole theme here.

A simple green salad works too if you want to feel like you’re making good choices.

This creamy lemon basil pasta is the summer dinner you didn't know you needed. Ricotta, Pecorino Romano, fresh lemon, and basil come together in a sauce that's rich without being heavy -- and the whole thing is on the table in the time it takes to cook pasta. Quick, simple, and exactly right for a hot night when you still want something that feels like a real meal.

Ingredients

  • 1 pound dried pasta of your choice

  • 1 1/2 cups ricotta cheese

  • 1 cup finely grated Pecorino Romano

  • Finely grated zest of 1 large lemon

  • Juice of 1 large lemon

  • 1/2 teaspoon kosher salt

  • 1/2 teaspoon freshly ground black pepper

  • 1/4 cup fresh basil leaves, chopped

  • Good-quality olive oil, for serving

Directions

  • Bring a large pot of heavily salted water to a boil over medium-high heat. Add the pasta and cook according to package directions until al dente.
  • While the pasta cooks, combine the ricotta, Pecorino Romano, lemon zest, lemon juice, salt, and black pepper in a large heatproof bowl and stir until smooth. When the pasta has about 2 minutes left, set the bowl over the pot and stir the mixture gently. It will loosen and warm as the steam hits it.
  • Drain the pasta well and add it directly to the bowl. Toss to coat everything evenly in the sauce. Fold in the basil, then serve immediately with a drizzle of olive oil over each bowl.
